Crab Dinner

While cruising through Kroger looking for dinner I can across a sale on “fresh” frozen crab legs. For some reason it really caught my eye and I pulled the cart over to see what this sale was all about.

It looked really good, but I have never cooked crab legs at home or had any idea of how to go about it. SO – I bought them anyways! It was a large package with about 5-6 sections of legs. (Is that what they are called?)

I did a little Googling of how to prepare these things and it ended up being really simple! I boiled a large pot of water, sprinkled in some salt and placed the legs in for about seven minutes.

I also Googled what is a good side to serve with crab legs. Everywhere I read said the simpler the better.  I sauteed some spinach and added parmesan cheese with a little salt. I also melted some butter and added a little garlic salt for taste.

As I was setting the dinner table I remembered that we received a cracker set at our wedding. Since this was the first time I had attempted to cook crab legs I had no idea where they were. After searching several cupboards I finally found them!

We had a lovely time messing with the crab legs. As my husband pulled his apart he would eat them, where I would pull them apart and put them in a pile to save until the end. As my pile of crab meat grew my husbands eyes got bigger and bigger. “I didn’t pick the right legs.” I had to explain that I was saving my until the end which made it look like a lot.

So next time we cook crab legs we are going to compile all the meat onto one plate and then divide it up. 😉

Corn Bread Pudding

Here is a fast and delicious dish that my Grandmother passed along to me this past summer. The whole family will love. This is a great dish to share during the holidays or if you are just have a quite evening in!


1 (15 1/2 oz) can of whole corn drained
1 (14 1/2 oz) cream style corn
1 (8 oz) package jiffy corn muffin mix
1 cup of sour cream
1 stick of melter butter

Dump both cans of corn, jiffy mix, sour cream and melted butter into a bowl. Mix all contents together until all ingredients are blended.

Pour into a greased casserole dish.

Bake at 350 for 45-60 minutes, until a very golden brown.

Voila! Give a few minutes to cool, but is perfect if served warm. (Maybe a little butter)

My Pinterest menu!

If I could choose my menu for the day from the beautiful pictures inside Pinterest this is what it would look like.

For Breakfast we will start off with a evenly cooked sunny side up egg with toast.


As I work away at my desk and think about lunch time I pull out my snack to help hold me over.


After I get out of my last morning meeting I race to the fridge and grab my packed lunch!

After a nice meal with my husband and dog begging from under the table we will cozy up to a evening movie.

Green Chicken Chiles

I needed to cook up the 5 chicken breast my husband brought home this past weekend for grilling.

I called my grandmother for a recipe for any ideas. My mother who is visiting her in Florida jumped on the phone with a tasty dish she had just found in the newspaper.

  • Ingredients
  • 2 lbs chicken breast
  • Creole seasoning
  • 1 lb of asparagus
  • 3/4 cup plain yogurt
  • 1 can of broccoli cheese soup
  • 1 can of Green Chiles

Coat chicken breast in Creole seasoning and place in a ban.

Chop the bottoms off, they can get pretty stringy!

Bring Broccoli Cheese soup to a boil then add 3/4 to 1 cup of Yogurt and stir. Drop in the Green Chiles. Turn heat down to simmer.

Place asparagus on top of chicken with lid. The steam will cook them nicely. Depending if you like the crunchy for soft will determine how long you leave them in the pan.

Houghtie – Get Down!

Lay the asparagus first, then the chicken and then pour the sauce over all! It is delicious with the right amount of spicy kick!

National Grilled Cheese Month!

I can’t believe the month is half over and I am just finding out about this! I must do my research. How long has April been NGCM?

When I say that I am obsessed with grilled cheese sandwiches I am not lying. It has caused more than one argument between me and my husband. When we are out to eat and I don’t find anything interesting on a menu – Grilled cheese it is. “Try something new!” he always says.. Why risk something new and not like it when I can order a wonderful Grilled Cheese and it is a guarantee win?

I often get a little wild and like to add tomato and some ham. With much excitement finding out today was NGCM, I googled grilled cheese and picked my favorites!

A few years back Oprah picked Cafe Muse, restaurant right down the street from me, for making one of the best Grilled Cheese! I have had it and I have to agree. I may even stop in this week just to honor this wonder month long holiday!


  • 1 slice Havarti cheese
  • 1 slice mozzarella cheese
  • 1 slice Danish fontina cheese
  • 1/2 Tbsp. butter , softened (for best results, use high-quality butter)
  • Honey from a squeeze bear bottle
  • 1 tsp. fresh basil , chopped
  • 2 slices tomato
  • 2 slices bread (organic multigrain bread works best)
  • Sauté pan large enough for 2 slices of bread

Healthy Turkey Loaf

Growing up did you ever cringe when your mom said it was meatloaf night?  I know I did. Somewhere between here and there I have grown to appreciate a good meatloaf.

Tonight I had a package of turkey burger in the fridge that needed to be used. Hummmmmm, what to make…  Turkey Loaf! Quickest dish I have ever made! Start with preheating the oven to 350 and pour yourself a glass of wine. 😉

Combine in a bowl – I used my hands to work it all together.

Bake for an hour… poke it with a fork every so often to check on it!

My side dish was a nice fresh garden salad with artichoke hearts, onions, banana peppers, and croutons…

Taco Night!

TACO NIGHT! This is a very fast and easy dinner. Just make sure that your burger/turkey is already thawed and you can have this done in 30 minutes, tops!

I used turkey burger with McCormick Chicken Taco seasoning. I always use 1 1/2 packages for extra flavor.

I start with browning the Turkey. While that is cooking I chop up the tomatoes and lettuce. We usually use flour tortilla wraps, but this time I rinsed off some romaine lettuce to substitute the the shells. (delicious!)

What other ingredient or extras do you include when you have taco night?


Snow Day Chicken

Many of you had Monday off for President’s day… unfortunately I did not.  But luck was on my side… Thank you Michigan weather, I got a work from home day (adult snow day). After working all day in my PJ’s the last thing I wanted to do was run out to the grocery store and pick up ingredients for dinner, so I checked the pantry and freezer and this is what I came up with:

Chicken Breasts

Poultry Seasoning

Olive Oil

Jar of Spaghetti sauce

Red Wine Vinegar

Spaghetti noodles


Mozzarella cheese (Actually string cheese, but it still worked!)

I decided to make a light version of chicken Parmesan (minus the deep fried breading). It was really simple!

First I sliced the 2 chicken breasts in half the long way (they were thick, by slicing they cooked faster). Next I created two little foil “boats” in each foil “boat” I added a bit of pasta sauce from a jar, the chicken breasts with Poultry seasoning on them, Olive Oil, and a big splash of Red Wine vinegar. I baked the chicken for 35 minutes at 400. Added some cheese on top and baked the chicken for 5 more minutes.

I was a bit nervous of my first bite because I truly just threw together what I could find… I served the chicken on top of some pasta and it was good! Dave actually said it was my best chicken ever. A proud moment for me 🙂
