Tasty!

I made the best dinner the other night. It was light, fulfilling, healthy, and the best part, tasty!

I started with a sauce pan full of water for the Asparagus.

The secret to making amazing asparagus is lemon. Yes, I add lemon. I did not have any fresh lemons this time so I used lemon juice. (In the little squeezable lemon shaped bottle.) Squeeze just enough so the water is tart or a whole lemon sliced, squeezed, and dropped into the pan. I also added salt and pepper. Depending on how crunchy you want your asparagus will determine how long you boil it. I go for approx 10 minutes.

Next, I preheated the over to 425, seasoned 2 thin slices of pork with salt/pepper and a seasoning salt. Bake for 15 minutes.

Finally, I made an amazing salad with a cup of apple sauce. I used roman lettuce and chopped it into small pieces. I added black olives, chick peas, artichoke hearts, croutons, topped with Kraft Light Parmesan Asiago Balsamic Vinaigrette (amazing).

The end result was AMAZING! Very quick dinner, yet very healthy!

The pantry needs help!

It seems that when ever I go to the grocery store I always walk out with the same things. I am looking for some help and recommendations: What can I add to this list to spice up my pantry and fridge?

Must haves for the cupboard:
Spaghetti sauce and wheat pasta
Canned chick peas, mushrooms, Black olives
Tuna Fish
Artichoke hearts
Pears and Crushed Pineapples
Jello
Fat Free Pudding.
Garnola


Must haves for the Fridge:

Lunch Meat
Cheese
Romain Lettuce
Yogurt

Friday Night – Date Night

My Husband has been gone the past 4 days and is finally on his way home.  When he left on Tuesday morning at 4:00 am he was so kind to leave his head cold with me. All week I suffered with terrible sniffles and sneezes. I even had to stay home from work for 2 days.

4 days later I am feeling back to normal! It is Friday night and my honey is coming home. I rushed home from work stopped at the grocery store,  straightened up the house, changed the bedding, did the laundry, showered, vacuumed, and prepared dinner.

Dinner – What to make for dinner.  I threw the question out on twitter for some Salmon recipes and got a great one from Kate Knowles at
If you can make this you can make that

Salmon with white wine and Cherry tomatoes.

Ingredients:

  • 1 portion of Salmon
  • 1/2 red onion
  • 1/4 cup dry white wine ( I used Chardonnay)
  • Handful of cherry tomatoes
  • handful of black olives
  • Fresh Parsley
  • couple sprays of butter
  • Salt and Pepper

Here is what you are going to want to do:

  • Chop Onion in wedges and lay at bottom of tin foil
  • Lay Salmon on top
  • Salt and Pepper
  • Fold Sides to make a parcel
  • Drop in Cherry tomatoes, Olives, and Parsley
  • Pour in wine.
  • Fold shut

Bake at 350 for 25 minutes.. Little less if you like it a little rare. Oh, I also make 2 baked potatoes and a beautiful Romaine salad.

As I wait for him to walk in the door I am enjoying a glass of wine, enjoying the smell of the scented candles, and singing along with David Gray. I love date night!
