Weight Watchers: Shrimp Zucchini

24 Jan

It has been a while since I posted a new recipe. I always think about making something new and sharing it on my blog, but I have been stuck on all my favorites lately. Since I started Weight Watchers last week I have been exploring new healthier ways of eating. Tonight before I left the office I came across the most interesting recipe on the WW website and I just had to try it.  I have never cooked with zucchini so I thought it was a little strange that I was craving it.

1 zucchini – slice
1 pound of uncooked shrimp – I used frozen, peeled.
1 cup grape tomatoes, cut in half
1/2 tsp of dried oregano
1/2 tsp minced garlic
1/4 cup of water
(I add some wheat pasta)

Saute sliced zucchini in a turn of olive oil. Cook both sides 2 minutes on high.  Once lightly browned remove and set to the side.
Saute shrimp for 1-2 minutes. Add tomatoes, oregano, salt&pepper and saute for another minute or two.
Pour in water and add garlic. Cook for another few minutes until everything is cooked and softened.
Finally, add zucchini and stir ingredients all together and turn off heat.

After we finished eating  husband gave me a 10 star rating and I said “I would pay $50 for that dinner” ha. Let me know if you get a chance to try this recipe! It is one that I will revisit soon. ( I have an extra zucchini and lot of shrimp in the freezer)

Weight Watchers!

9 Jan

It is a a new year and today I joined Weight Watchers Online.

This is my second time on the program. 2.5 years ago – 6 months before our wedding I joined and lost about 16 pounds. I am by no means “fat” but you know a girls need to look good on her wedding day!

Well, over the past few years I have let a pound here and there hang around. My jeans fit a little bit tighter and I would wear a sweatshirt all the time if I could. It has been long enough and I decided that the WW online offer right now was to good to pass up! (no sign up fee and 18 a month)

I am mostly joining to get back on track of eating healthy, tracking portions, and increase exercising each week AND to feel better about my self!

I plan to share my journey and hope to inspire others to get healthy with me! I have done it before and it really does work!

Have you every joined WW or currently on the program? Please share your experience!!

Sesame Chicken and Broccoli

9 Jan

After an amazing holiday season full of so many treats, filling meals and let’s be honest, far too many beverages then I really needed to drink it’s time to padlock the pantry and get down to business. To make things even more serious my boyfriend and I are going to Mexico in three months… there is no extra time to push off the inevitable it’s time to start the diet.

From what I’ve heard and experienced through the tightness of my pants eating out isn’t the healthiest past time. Lucky for me my New Year resolution is to start cooking! So my meal #1 comes straight from a Weight Watchers cook book. I have never done Weight Watchers but my parents have and I have seen first-hand the amazing results. So here it goes my first meal I made was Sesame Chicken, Broccoli and Couscous (like fancy rice I guess?).

My Boyfriend is still spending time with his family for the holidays so lucky for him he was not a test rat for my first kitchen attempt.

To my surprise my meal was delicious, low in calories, nutritious and SO easy to make.

If you are looking for a light, SUPER easy meal that tastes amazing and you can whip up in a jiffy follow these steps:

First you’ll need a few ingredients:
2 TBS Sesame Seeds
4 Chicken Breasts
Cooking Spray
2 TBS Honey
2 TBS reduced sodium Soy Sauce
½ TSP ground ginger
Box of Cous-Cous

For the Chicken:
1. In a non-stick skillet spray with cooking spray and lightly toast sesame seeds
2. Heat up two TBS of EVOO in a new skillet, cut up chicken breast into small strips and place them on the skillet, cook 3 minutes on each side or until chicken is lightly browned
3. Combine toasted sesame seeds, honey, soy sauce and ginger; pour over chicken, and cook 1 additional minute, turning chicken to coat with sauce

1. Cut it up
2. Through it in a bowl ¼ full of water
3. Microwave on high for around 4 minutes

1. Buy at grocery store
2. Follow directions on box 😉
Such a yummy meal and it was SO easy. Maybe I’m not that clueless in the kitchen?!
